Ingredients
3 Cups of shredded yellow Yukon potato or sweet potato
1/2 of sliced sweet onion
1 egg
1/4 Cup of chopped parsley ( celery or chive)
1/2 Teaspoon of salt
1/2 Teaspoon of sugar
1/4 Teaspoon of ground black pepper
1/2 Cup of flour (waffle or pancake) mix
1/3 Cup of Maizena
1/3 Cup of water
1 Tablespoon of vegetable or olive oil
Preparation:
Beat egg and mix with shredded potato
Add flour and condiments, then stir with water until all ingredients mixed together
warm up waffle maker, spray can olive oil ( PAM) and cook your potato waffle mix.
Serving suggestion:
Potato waffle, sprinkle with ranch or yogurt base sauce on a side with sausage or bacon.
